Pu erh is a Chinese post-fermented tea originating from Yunnan province. Unlike green or black teas, it undergoes microbial fermentation, either natural over time or accelerated, which transforms its aroma and flavour. The world of pu erh is rich in nuance: vintage, growing area, fermentation method and ageing all have a significant influence on the result, much like wine or whisky.
